Cookery lessons are back in autumn 2008
There are 8 spaces on each session-
We gather at 1pm at the shop in Blackheath.Then off to go shopping at the Farmers Market for the season’s best and to introduce you to the food heroes who supply many of our ingredients.
These are not just demos, we all get stuck in! Back at the shop we plan our two prep lists- over coffee (corrected with a shot of grappa if required) 4 pupils go upstairs with one chef and 4 work downstairs with another.
Half way through the afternoon you swap, so you get to work with two of our top chefs. We cook until about 6.30 pm when we break for supper and a glass of wine chosen from our carefully selected list. We eat what we have cooked and sometimes there is a little to take home! Lock up is at 8 pm

Game on- Keith Bennett from Stockings farm in the Chilterns provides us with Pheasant, Venison, Pigeon, rabbit, hare wild duck, from shoots on and around his farm. We cook game pies, terrine, ragout and Pheasant Normande and some classic autumn vegetable accompaniments.

Canapés and pates- the sort of simple but delicious dishes you need for home entertaining over Christmas, including pickled mushrooms and Jerusalem artichoke cream, buckwheat blinis with home cured salmon, Thai fish cakes with sweet chilli sauce. Pates make fantastic starters and great canapés they keep well or freeze- most important they are easy! Chicken liver parfait, smoked mackerel and lime, salmon and lime rilette with pickled vegetables.
