Finely sliced aubergines and courgette are salted, washed and dried. Half are fried in olive oil, the other half are steamed. They are layered with tomato, basil, buffalo mozzarella & Parmesan.
Vegan Option - as above but the dish is finished with vegan mozzarella.
Serves to 1 - 360g
Finish off at home in your oven.
